     Mom's Green Chicken Enchiladas

Ingredients
Boneless or Bone-In Chicken Breasts
1 Can Green Enchilada Sauce
Corn Tortillas
Frying Oil
Shredded Cheddar Cheese
Sour Cream
Salt, Pepper & Garlic
1 white onion
 

Instructions
In a large pot or slow cooker simmer chicken with chopped onion, salt, pepper & garlic till tender, shred it up
Very lightly coat a frying pan with oil and heat corn tortillas until flexible to work with
Stuff tortillas with shredded chicken & cheddar cheese and place a single layer in a baking dish that's been very lightly brushed with oil
Cover in green enchilada sauce and top with remaining cheddar cheese. Bake for 20-30mins on 400 degrees or until bubbly. Serve topped with sour cream
