     Lemon Ricotta Pancakes

Ingredients
3 eggs separated
3/4 cup ricotta cheese
1/4 cup plain flour
1/4 teaspoon salt
1 teaspoon lemon zest
 
Instructions
Beat egg yolks until think & pale. Stir in ricotta. Add flour, salt & lemon zest stirring to combine.
Put egg whites in a bowl and beat until stiff but not dry.
Gently fold whites into batter until just combined.
Cook in fry pan. Recipe may need to be doubled.
