     Smashed Chipotle Sweet Potatoes

2 large sweet potatoes
1 tablespoon butter
1-2 canned Chipotle Chiles, pureed (canned with adobo sauce)
2-3 teaspoons Adobo sauce (to taste)
salt and pepper, to taste
1/4 cup breadcrumbs (approx)
1/4 cup cheddar cheese (approx)

Peel, cube, and steam the sweet potatoes. Remove from steamer baskets and allow to dry for a few minutes.
In a large bowl combine sweet potato cubes, butter, Chipotles and Adobo sauce. Mash by hand until smooth & well mixed. Salt and pepper to taste.
Move mash to a casserole dish or loaf pan. Sprinkle cheese and breadcrumbs on top.
Bake in a 350 degree oven until cheese is melted and crumbs are golden.
