Preheat oven to 325. Spray casserole pan. Microwave spinach for 2 min. Remove and squeeze dry. Place spinach into a bowl. Saute onion in 1 T. of butter (3-4 min). Add onion to the spinach. In same skillet, add 3 T. butter. Whisk in flour, salt, pepper. Stir until smooth. Slowly add milk until mixture thickens (for 3-5 min). Turn off heat.
