3 cups coarsely shredded raw potato (3 med. potatoes)
1 cup grated swiss or cheddar cheese
3/4 cup cooked: chicken, ham, or browned sausage
1/4 cup chopped onion
1 cup evaporated or rich milk (part cream)
2 eggs
1/2 t. salt
1/8 t. pepper
1 T. parsley flakes (fresh)
Instructions
Preheat oven to 425. In a mixing bowl, mix together the oil and shredded potato. Put them into a 9 inch pie pan. Press evenly into a pie crust shape. Bake at 425 for 15 minutes until just beginning to brown. Remove from oven.
Layer on:
cheese
meat
onion
In a mixing bowl, beat together:
evaporated milk
eggs
salt
pepper
Pour egg mixture onto other ingredients.
Sprinkle with parsley flakes. Return to the oven and bake at 425 about 30 minutes, or until lightly browned, and knife inserted 1 inch from the edge comes out clean. Allow to cool 5 minutes before cutting into wedges.

This is great to bring to a brunch. We have it as dinner often. I add spinach and tomatoes also.
