2 cups Bob's Red Mill Gluten Free Biscuit and Baking Mix
1/2 cup Spectrum Palm Shortening
6 - 8 tbsp water ** I use more until dough is softer**
Instructions
Place mix into a bowl and cut in shortening until dough is in pieces. Add water and blend until dough holds together.
Form a dough ball. Sprinkle rice flour on a piece of plastic wrap and roll dough in a a circle with a rolling pin. Flour the pin as needed. Invert dough into greased pie pan and shape edges.
Bake crust at 425 degrees for 15-18 minutes or until starting to brown. To back with filling, fill and bake pie according to recipe. Makes a 9 inch crust.
