     Shrimp and linguini

Ingredients
2 pd. Shrimp (Raw, tail on...I usually get a frozen bag at BJs)
1 1/2 cups White wine (or cooking wine)...give or take
1 1/2 cup chicken broth...give or take
2 T. Olive Oil
1 med. onion...chopped
3-4 garlic buds...pressed
1 box of linguini
2 T. fresh chopped parsley
1/2 tsp. salt
 
Handful of cheese...moz. or parm or both
4-5 plum tomatoes (de-seeded and diced)

Instructions
Chop the onion. Put olive oil into a large saute pan. Press the garlic. Saute the onion and garlic until they are soft. Add chicken broth and white wine. Allow to simmer for about 15-20 min.
While that simmers, chop and de-seed the plum tomatoes. Chop the parsley.
Boil (salted) water in a large pot and cook the linguini according to the directions.
Defrost and rinse the shrimp in salt and cold water. Cook the shrimp in the wine/broth mixture for about 2-3 min. per side. Put plum tomatoes on top of the shrimp and cook for one min. more. Drain the pasta and put it into a large bowl. Pour the shimp mixture on top. Put parsely on top. Stir. Put a handful of cheese (your pick) and allow it to melt before serving.
Serving Suggestions
I serve this on Christmas Eve with salad and bread
