     New Zealand-Salted breadstick/walnuts/cheese

Ingredients
2 cups of Parmigiano-Reggiano
3/8 c walnut halves roasted/320 deg. 8 minutes
Breadsticks-
2 t active dry yeast
5 1/2 oz warm water
1 3/4 c flour
1 t sea salt
1 t apple syrup
 
3 T virgin olive oil -extra for greasing
baking trays
1 T sea salt
coarse semolina flour for sprinkling

Instructions
Breadsticks- Place yeast and 1/4 c warm water in small bowl and set sit for 5 minutes until frothy. Place flour and salt in the bowl of a food processor with metal blade. Add syrup (Or 1 t olive oil) olive oil, yeast mixture and remaining water. Process unitl ball forms and is smooth and elastic (2-3 minutes). Remove from processosr and kneed into a ball. Place dough in large, lightly greased bowl, cover with plactic and leave in warm room until doubled. (about 1 1/2 hours)
Gently knowck dough back in bowl. Cover with plastic and leave in warm room until doubled again. (30 minutes) Preheat oven to 390 degrees. Pour the remaining 2 T oil on shallow tray and sprinkle salt over oil. Grease 2 baking trays and sprinkly each lightly with flour.
Break off pieces of dough to walnut sizes and roll in tin breadstick shape. Sit sticks in the soil and salt then place them with the oil and salt facing upward, on prepared baking trays. Bake for 15-20 minutes or until crisp and golden. Transfer on cooling rack. Store in airtight once cooled and eat the same day.
Arrange cheese and walnuts and breadsticks on a platter and let everyone help themselves.
