     Zucchini - Southeast Asian Coconut

Ingredients
4-5 c. of zucchini, cubed
2 garlic cloves
1 fresh chile
1/2 tsp. turmeric
1 tsp. canola oil
2 scallions
2 Tb. fresh lime juice
2 Tb. fresh chopped basil
2 Tb. fresh chopped mint
 
1/4 c. coconut milk
salt to taste
Instructions
Cook first five ingredients together for five minutes. Add remaining, and cook over low heat for ten minutes.
