     Goat Cheese and Mango Salad

Ingredients
1 large log of goat cheese
bread crumbs
1 package baby greens
1/3 cup grated carrots
2 mangos, peeled and sliced lengthwise into small strips
Dressing- 1/4 cup olive oil
1/4 cup lemon juice
1/4 cup honey
1/4 cup dijon mustard
 

Instructions
Slice goat cheese into pieces about 1/2 inch thick. Coat evenly with bread crumbs and pan fry on all sides. Set aside.
Mix together olive oil, lemon juice, honey, and dijon mustard. Toss into baby greens and carrots until salad is lightly coated.
Plate salads. Place about 3 goat cheese pieces on each salad. Distribute mango slices evenly on plates.
Serving Suggestions
Mango should be fresh, sweet and firm to counteract the tang of the goat cheese.
