     Coconut Macaroons

Ingredients
2 egg whites
1 dash salt
1/4 teas. vanilla
2/3 cup granulated sugar
1-1/2 cuts sweetened flaked coconut
 

Instructions
Preheat oven to 325.
Beat egg whites, salt and vanilla until soft peaks form. Gradually add sugar; beating until very stiff and glossy. Fold in coconut.
Drop by rounded teaspoon about 2-inches apart onto greased cookie sheet. I use parchment paper.
Bake at 325 for about 20 minutes or until set and lightly browned. Let cool and remove from cookie sheet or paper. Store in tightly covered container.
