     Devil's Food Layer Cake

1 1/4 cup sifted cake flour
2 teaspoons baking powder
1/8 teaspoon salt
2 cups sugar
3/4 cup cocoa
5 eggs, separated
1 cup cold water
1 teaspoon vanilla

Sift flour, baking powder, and salt together twice. Mix sugar, and cocoa in large bowl until blended. Beat yolks until thick and add to sugar mixture; add water and vanilla. Stir well. Add 1/2 of flour mixture; stir 25 strokes. Add remaining flour mixture; stir 50 strokes. Beat whites to form stiffly pointed peaks. Fold gently into batter using 20 to 25 folding strokes both clockwise and crosswise. Pour into 9 inch layer cake pans. Bake at 365 degrees for 25 minutes.
