     Snowball Cake

Ingredients
1 angel food cake
2 tbsp. unflavored gelatin
4 tbsp. cold water
1 c. boiling water
1 c. orange juice, strained
Juice of 1 lemon, strained
1 c. sugar
1/8 tsp. salt
1 pt. whipping cream
 
Frosting items-
1/2 pt. whipping cream
1 can shredded coconut (optional)
-be sure to see the note at the end for frosting

Instructions
Soften gelatin in cold water. Add boiling water and stir until dissolved. Add fruit juices, sugar and salt and set in refrigerator.
When party thickened, fold in 1 pt. whipped cream. Line a large mixing bowl with waxed paper. Trim off top crust of angel food cake. Pull apart with fingers.
Alternate layers of cake and gelatin mixture (starting with cake) until bowl is full. Also end with layer of cake. Chill until firm. Turn out onto plate, remove waxed paper, and spread with shipping cream. Sprinkle with coconut. For Christmas, can be garnished with red and green cherries to cut to form flowers-poinsettias. Set in refrigerator until time to serve.
Note- for the frosting add some confectioner's sugar to whipped cream to soften.
