     Cornbread

Ingredients
1 cup butter
2 cups sugar
4 eggs
mix well then add
3 cups flour
1 and one half cups of cornmeal
1 teaspoon soda
1 teaspoon baking powder
2 and one third cups buttermilk or
 
2 and one quarter milk and 2 Tablespoons vinegar

Instructions
cream first 3 ingredients
add next 5 ingredients and mix well
Pour in to greased 15x11 pan or 2 9x13 pans. you can also make muffins if you so desire. BAKE AT 400 DEGREES 20 minute for 2 pans or until golden brown for the big pan!
I use real butter but you can use canola oil or margarine if you wish. I always made this when I was not sure if my kids would like what I was making for dinner! They had to eat their dinner before they could have cornbread. It tastes like cake and is loved by anyone I have ever made it for. VERY EASY AND WELL WORTH THE EFFORT.
Serving Suggestions
Great with soup, chili, or any fall or winter cool day.
