     french onion soup

Ingredients
2 tablespoons butter
1 tablespoon olive oil
2 pounds onions
1 teaspoon salt
1/2 teaspoon sugar
3 tablespoon flour
2 quart heated beef broth
1 cup red wine
1 bay leaf
 
1/2 teaspoon sage
salt and pepper to taste
gruyere and parmesan cheese

Instructions
Cook onions until they sweat - low heat 10-20 mins. Uncover and raise heat and stir in salt and sugar. Cook for 30 mins stirring until onions turn a deep golden brown. Lower heat to medium, stir in flour if doesn't absorb, add butter. cook for 2 mins.
Add cup broth until not chunky and rest with wine, bay leaf and sage. Bring to simmer and cook for 45 mins.
Add soup to bowls and sprinkle each with cheese. Bake until cheese is melted and golden brown.
