Preheat the oven to 250 degrees. Peel and cut the potatoes and onions into 1/2 inch slices. Grease the bottom and sides Pyrex baking dish (about 7 x 9 inches) with a strip of bacon. Put a layer of potatoes on the bottom of the dish. Add a layer of meat, then a layer of onions. Sprinkle on a little salt and pepper. Repeat the layers. Almost cover with water. Sprinkle on a little more salt and pepper. Cover with strips of bacon. Bake for 2 or 3 hours or until the meat is tender. If the bacon doesn't brown, turn on the broiler for a few minutes toward the end. I like the gravy from this dish served over rice.
