2 eggs, separated, yolks beatenm to a froth, whites stiffly beaten
1 cup milk
Grated rind of 1 lemon
Juice of 1 lemon, strained
2 Tablespoons butter or margarine, melted, theen cooled to lukewarm
Instructions
Preheat oven to 350 degrees. Set out a 1 1/2 to 2 quart pudding dish. Into a medium bowl, sift flour with sugar and salt. Blend in beaten egg yolk, add milk, grated lemon rind, and lemon juice, beat well. Then add melted butter and beat a few strokes more. Lastly fold in stiffly beaten egg whites. Turn into pudding dish and set into a pan of hot water (the water should reach one third to one half way up the sides of the mold.) Bake until sponge is lightly colored, custard is on the bottom and cake is on the top, about 45 minutes.
