     Jambalaya

Ingredients
2 tsp olive oil
1 Andouille sausage sliced into pieces
1 lb boneless chicken breast,cut into pieces
1 lb cooked shrimp
1 to 1.5 cups onions, chopped
1 cup chopped celery
1 large green bell pepper,chopped
2 cloves garlic, minced
1 tsp tabasco sauce
 
2 bay leaves
1 to 1.5 tsp salt,1 tsp basil,1 tsp thyme
1 tsp ground black pepper,1/2 tsp chili powder
4 medium roma tomatoes,peeled and chopped
1 8-oz can tomato sauce, 1/2 cup chopped green onions
1 14.5 oz can chicken broth
2 cups uncooked rice (minute rice is fine)

Instructions
Heat oil over medium heat, stir in sausage, saute until crisp, about 4-8 minutes. Stir in onions, celery, and green pepper, saute until crisp, about 5 minutes.
Stir in chicken,garlic,tabasco,bay leaves, and seasonings. Cook over medium heat, stirring constantly and scraping pan bottom as needed, 5 minutes.
Stir in tomatoes;cook until chicken is tender, about 5-8 minutes. Stir in tomato sauce and chicken broth, bring to a boil. Stir in green oinions and rice.
Bake,covered, in a preheated 350 degree overn until rice is tender but still a little crunchy, 20-25 minutes. Remove bay leaves and serve immediately.
