     Salmon with lentils

Ingredients
1 cup dried lentils
1 small onion chopped
1 carrot chopped
1 celery rib chopped
2 tbsp red wine vinegar
1 tbsp olive oil
1 tbsp dijon mustard
1 garlic clove minced
1 lb salmon fillet
 
1/4 tsp salt and pepper

Instructions
Heat broiler. In medium saucepan, combine lentils and 3 cups of water. Bring to a boil over high heat. Reduce heat to low, cover and simmer 5 minutes. Add onion, carrot, and celery; cover and continue cooking until lentils are tender, about 20 to 25 minutes. Drain, reserve cooking liquid.
In a small bowl, whisk cooking liquid with vinegar, mustard and garlic. Toss lentils with half of dressing.
Season salmon with salt and pepper. Coat a baking pan with non-stick spray. Place salmon, skin side down on prepared pan; broil until salmon is cooked through about 8-10 minutes. Divide lentil mixture among 4 plates. Flake salmon on top of lentils and drizzle with remaining dressing.
