     Mushroom Cheddar Chowder

Ingredients
1 1/2 lbs button mushrooms chopped
1 medium onion peeled and chopped
3 tbsp olive oil (we use a canola/olive mix that is really good)
1 tsp salt
1/4 tsp black pepper
3 tbsp all purpose flour
2 cups soup stock (chicken, beef or veggie)
2 cups 2% milk
1 cup sour cream
 
1/2 lb grated cheddar cheese

Instructions
Saute mushrooms and onions in olive oil and salt. Add the flour and cook for 1 minute. Add stock and milk and bring to a boil allowing to cook 3-4 minutes. Take soup off the heat and add sour cream and cheese and stir until cheese is melted. Serve with extra sour cream and cheddar cheese
