     Mussels Joan

Ingredients
1/2 lb. butter
1/2 C olive oil
2 C chopped fresh parsley
2 C fresh bread crumbs
1 1/2 C white wine
1 t oregano
s/p to taste
2 T grated parmesan cheese
6 lbs. mussels cleaned
 

Instructions
Melt the butter in a large pot. Add all ingredients except for the mussels and heat, stirring, to make a thick sauce.
Add the mussels. Cover and steam until they open, about 5-7 minutes. Serve over linguine with lots of french bread to sop up the sauce.
