Soak dried mushrooms 2 hours, drain, slice. Mix ground pork with cornstarch, soy sauce and sherry. Put 1 T. oil in wok and stir fry meat until done. Drain on paper towels. Stir fry bean sprouts 1 minute, remove and drain with meat. Stir fry celery and onions 2 minutes, remove and drain. Stir fry mushrooms and bamboo shoots with sugar 2 minutes, remove and drain. Add more oil as needed. Mix all ingredients with oyster sauce, green onions and salt. Drain on paper toweling and cool or refrigerate. Put 1/3 C filling on skin, roll one corner over filling, spread edge with beaten egg, roll up tightly. Deep fry till golden brown.
