Heat oil in large pan, add onions, garlic, ginger, and curry paste; cook stirring until onions are soft. Rinse lentils (if you aren't using dry ones) and pour into pot with potatoes, apple, beef stock and cinnamon stick; simmer covered about 20 mins or until potatoes are soft. Remove cinnamon stick. Blend until smooth, add cooked beef and remaining ingredients. Freezes well.
