Category   Salads - Soups - Sidedishes
Sub Category   None
Servings   8
Preptime   4-8 hours

Ingredients
3 1/2 lb. chicken cut-up - or 2 C. cooked chicken
1 tsp. salt
1 large onion chopped
1 16-oz. can diced tomatoes
1 10-oz package frozen lima beans
1 10-oz package frozen corn
1 package frozen okra, cut (opt.)
1 10-oz. package frozen carrots (or fresh carrots)
1/2 tsp. paprika

pinch basil
1 tsp. worcestershire sauce
1/2 c. chopped parsley (or 2 T. dried parsley)
2 large bay leaves
1 qt. chicken broth (opt. Use if you use pre-cooked chicken or if stew needs more liquid)

Instructions
Cook chicken in enough water to cover it in covered oven-proof pot for about 1 hour, until you can remove meat from the bones easily. Remove chicken from pot and cool. Cut meat from the bones and return it to pot. OR simply use precooked chicken.
Add remaining ingredients to pot and cook in oven at 250 degrees or crockpot for 4-8 hours (until carrots are tender)
Optional- Use flour and water paste to thicken broth slightly.
