     Chicken & Vegetable Ragout

Ingredients
1 c UNCLE BEN'S® Natural Whole Grain
Brown Rice (30-minute cook)
Nonstick cooking spray
1 lb. chicken tenders
4 cloves garlic, sliced
1 cup green beans
1 cup zucchini slices
1 cup sliced mushrooms
1 1/2 tsp. fresh basil leaves, chopped
 
(or 1/2 teaspoon dried)
3/4 tsp. fresh thyme leaves (1/4 dried)
2 tomatoes sliced into 8 pieces each

Instructions
Cook rice according to package instructions.
Apply coating spray to large non-stick skillet. Add chicken and cook 2-3 minutes each side or until cooked through. Remove from skillet and set aside.
Add garlic, green beans, zucchini and cook for 2-3 minutes. Add mushrooms, herbs and cook two minutes more. Add tomatoes and cook until heated through.
Pour ragout over chicken and serve with rice.
