Ingredients
1 1/2 c all-purpose flour
3 1/2 tsp baking powder
1 tsp salt

1 1/2 c milk, divided
1 egg, lightly beaten
3 tbsp butter, melted

Instructions
Pre-heat a lightly greased griddle pan over med to med/high heat. Sift dry ingredients together in a large bowl. Create a well in the center and pour in 1 1/4 c milk, egg, and butter.
Stir ingredients until just combined. Add more milk, as needed, to adjust the thickness of batter.
Scoop/ladle batter, about 1/3 c batter per cake, onto your hot griddle. Cook your pancakes until golden brown on each side.
Variations- Add vanilla and/or cinnamon to your batter. Or, cook with small pieces of fresh berries.
