Cheri's Chicken Marsala Recipe

     Cheri's Chicken Marsala

Ingredients
4 Boneless skinless chicken breast, cut into chunks or strips
½ Cup Marsala wine
3 to 4 Cloves of garlic minced
1 Tsp ground pepper
¼ Cup fresh basil, chopped (If you don't have fresh basil use 1 Tbs Italian seasoning)
½ Cup water
1 Cup fresh mushrooms diced
For added zip to the flavor I will often times chop ½ an onion and sauté it with the chicken
 

Instructions
Preheat a large non stick saute pan over medium heat
Add chicken chunks, half the garlic and half the pepper (onion also if using) Turn as chicken gets white on the bottom. If chicken sticks, use a small amount of water to loosen.
Add the wine, the rest of the garlic and other remaining seasonings. Cook for two minutes and add mushrooms.
Continue cooking until the biggest chunks of chicken are cooked through out. Note- I like to simmer it with a cover over a lower heat so the steam and juices really get infused into the chicken! So this recipe can be pretty fast or you can go slower for even more flavor. A great side with this would be a simple green salad or take only your chicken out of the pan and saute some fresh zucchinini and yellow squash together in the sauce……yum flavor!!
Serving Suggestions
Serve this up over some angel hair pasta or any kind of rice.
