     Classic Potato Latkes

Ingredients
2.5 lb potatoes
2 medium onions
2 large eggs
1.5 tsp salt
0.5 tsp ground white pepper
0.25 c all-purpose flour
veg oil for frying
 

Instructions
Preheat oven to 250, peel and grate potatoes and onions. Add egg, salt, pepper, and flour and mix well.
Squeeze handfuls before frying. Drop into oil, then flatten with spoon. Fry 4-5 mins on each side. Pat dry with paper towel.
Serving Suggestions
Serve with applesauce or sour cream.
