     Homemade Tomato Soup

Ingredients
1.5 tbsp olive oil
1 onion, chopped
2 carrots, peeled and chopped
one 14.5 oz can diced tomatoes
1 tbsp tomato paste
1 large clove garlic, crushed
0.5 tsp sugar
1.5 c veg broth
1 bay leaf
 
salt and pepper
3 tbsp cream (optional)
2 tbsp fresh basil (optional)

Instructions
Warm olive oil in saucepan over low heat, add onion and carrots, and saute for 5 mins.
Add tomatoes, tomato paste, garlic, sugar, broth, bay leaf, and seasonings, and bring to a boil. Reduce heat, cover, and simmer for 20 mins.
Remove bay leaf, transfer to blender, and blend until smooth. Return soup to pan, add the cream and basil, and reheat.
