     Pasta e Fagiole

Ingredients
2 tsp olive oil
1 onion, chopped
2 cloves garlic, minced
30 oz chicken/veg broth
15 oz diced tomatoes
15 oz cannelini or great northern beans, drained and rinsed
0.5 c ditalini or small pasta
0.5 lb spinach
romano cheese - grated (optional)
 

Instructions
Warm oil in large saucepan over med heat, add onion and garlic til onion is soft.
Add broth, tomatoes (with juice), beans, and pasta. Cook 15 minutes.
Add spinach, cook til wilted.
Serving Suggestions
serve with grated romano
