     Squash Delite

Ingredients
2 and a half lbs. yellow squash
2 eggs, beaten
4 Tbsp. margarine
One half medium onion, chopped
Salt and pepper to taste
One half cup sour cream
1 cup grated cheddar cheese
1 cup coarse cracker crumbs
 

Instructions
Cut squash in one half inch slices. Cook covered on medium heat in small amount of salted water. Drain. Mash with spoon into course pieces.
Add beaten eggs, margarine, sour cream, cheese, and cracker crumbs for topping. Place in a well greased casserole and top with additional cracker crumbs and cheese.
Bake at 325F for 10 minutes
