Preheat oven to 350.
Grease two medium loaf pans (8 1/2 in).
In one bowl mix the flour, baking soda and salt.
In a larger bowl blend the sugar and butter until smooth and beat in the banana and eggs.

Gradually add in dry ingredients until evenly blended (As little work as you can do here is best, it will improve the texture of the bread. But make sure it's well mixed because a mouthful of baking soda is a bad surprise.)

Split evenly between the two pans and bake until a skewer comes out clean.
It said bake for 55 to 65 minutes but with my oven it was closer to 50 minutes when they were done, this may vary if you use a dark metal pan.

Cool in the pans for 5 to 10 minutes before removing and letting cool completely.
