Black Bean Soup

Ingredients
-
1/2 c chopped onion
-
1 t minced garlic
-
2 (15oz) can black beans, rinsed and drained
-
1 ( 8 oz) can corn, drained
-
1/2 c refrigerated fresh salsa
-
1 (14 oz) can fat free, less sodium beef broth
-
1/2 t ground cumin
-
1/4 t ground red pepper
-
2 T fresh lime juice
 
-
1/4 c preshredded reduced fat Mexican cheese
-
Chopped fresh cilantro
-
Reduced fat sour cream

Instructions
Heat a large nonstick skillet over medium high heat; coat pan with cooking spray. Add onion; cook 1 min. Add garlic, and cook 3 min or until tender.
mash 1 can of beans; add to onion and garlic. Add remaining can of beans, corn, and next 4 ingredients; bring to a boil. Reduce heat, and simmer, uncovered, until thoroughly heated. Stir in lime juice. Ladle soup into bowls; sprinkle with cheese and cilantro, if desired. Top with sour cream, if desired.
