     The world's Best Banana Bread

Ingredients
2 Cups All purpose flour
1/2 cup white sugar
3 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Stir in
1/2 cup chopped nuts (pecans are good)
1 cup chocolate chips (mini chips, dark or milk chocolate)
 
Beat together
1 egg
3/4 cup of milk
1/4 cup vegetable oil or melted shortening cooled
1.5 cups of mashed ripe banana's (3 whole banana)

Instructions
Keep overripe bananas in the freezer and they will be perfect consistency and the flavor is much better for cooking. Just thaw them in cold water for a few minutes while you assemble the ingredients. Cut the end off and squeeze the banana glop out to use. They should still be full-looking, if they have gone flat, black and wrinkly, throw them out, they are dry!
Preheat oven to 350F. Grease a 9inch loaf pan. Sift dry ingredients together, stir in nuts or chocolate if desired to dry ingredients. Beat liquid ingredients together. Add liquid to dry ingredients, and stir until batter is just a bit lumpy but blended.
Bake for an hour until toothpick inserted in centre comes out dry and bread has come away from sides of pan a bit. DOn't overbake, a heavy loaf like this continues to bake a few minutes after you remove from oven.
These loaves are best left until cool to the touch before you remove them from the pan. They cut better the second day.
