     RHUBARB CAKE

Ingredients
1/4 c. butter or margarine
1 1/2 c. brown sugar
1 egg lightly beaten
1 tsp. vanilla
1 1/2 c. flour, sifted
1 tsp. baking powder
1 c. sour cream
4 c. diced rhubarb,
1/3 c. sugar
 
1/2 tsp. nutmeg

Instructions
Line pan with waxed paper. 8 x 10 inch.
Cream together sugar and butter until fluffy, 3 or 4 minutes. Beat eggs and vanilla. Fold in sifted flour and baking powder with rhubarb and sour cream.
Bake 40 minutes at 375 degrees F.
Serving Suggestions
Serve with whipped cream.
