     Cheese Souffle

Ingredients
2 tblsp. butter
2 tblsp. flour
3/4 c. milk
4 egg yolks
6 egg whites
1 1/2. c. shredded cheddar cheese
 

Instructions
Preheat oven to 375. Butter 8 souffle dishes. Melt remaining butter. Stir in flour with small whisk. Heat in microwave, gradually adding milk. Keep heating at 30 sec. intervals until it resembles a thick cream. Add yolks one at a time and reheat until thickened. Add cheese and reheat.
Beat egg whites until stiff. Carefully fold in cheese sauce and transfer to souffle dishes.
Bake for 30 min.
