     Mandarin Chicken Salad

Ingredients
1/2 c. Bisquick mix
2 tbsp. sesame seed
1 tsp. ground ginger
2 tbsp. teriyaki sauce
1 tbsp. olive oil
1 lb. boneless, skinless chicken breasts, cut into 1 inch pieces
1 (10 oz) bag romaine lettuce mix
1 can (11 oz) mandarin orange segments, drained
1 c. frozen snow pea pods, thawed and drained
 
1/2 c. asian style dressing.

Instructions
Heat oven to 425 degree. Spray cookie sheet with cooking spray. Place Bisquick, sesame seeds and ginger in 1 gallon bag; mix well. In small bowl, mix teriyaki sauce and oil. Coat chicken pieces with oil mixture. Shake about 6 chicken pieces at a time in bag of Bisquick mix until coated. Shake off any extra mixture. Place chicken pieces in single layer on cookie sheet. Bake 10 - 15 minutes or until chicken is no longer pink in the center. Cool 5 minutes. Meanwhile, in a large bowl, mix salad mix, orange segments and pea pods. Top salad with warm chicken pievces and drizzle with dressing; toss to coat.
Serve with breadsticks and pineapple chunks.
Add a bit of crunch to this salad with chow mein noodles or other fried Chinese noodles.
