     Potato Kugel

Ingredients
6 medium russet potatoes, peeled
2 to 3 carrots peeled
1 onion
3/4 cup posdered nonfat milk
1 garlic clove, minced
2 eggs, beaten
3 tablespoons vegetable oil
2 teaspoons salt
1/4 cup whole-grain bread crumbs
 
TOPPING-
1 cup (4 ounces) shredded cheddar cheese
1 cup plain yogurt or sour cream
fresh chives for garnish, optional

Instructions
Grate potatoes, carrots and onion; drain off liquid. Gradually stir in powdered milk. Add remaining ingredients except topping.
Spread into greased 7-in. x 11-in. baking dish. Bake at 350 degrees for 40-60 minutes.
When kugel is nearly done it will test dry like a cake and the edges will be brown. Sprinkle with cheese and return to oven for 5 more minutes until cheese melts.
Remove from oven; cut into 2-in. squares. Top each square with 2 tablespoons yogurt or sour cream. Garnish with fresh chives if desired.
