Heat vegetable oil in medium pot until oil reaches 350.
In small bowl, combine cheeses, lemon zest and thyme.
Put cheese mixture in piping bag.
Pipe cheese mixture into olives
Put flour in one bowl, egg in another bowl and breadcrumbs in a third bowl.
First, place olives in flour and coat. Next, coat flour covered olives in egg and then coat in breadcrumbs.
Fry olives until golden brown
Drain on paper towels
