     Shrimp Toast

Ingredients
1/2 pound of shrimp, shelled and deveined
1 egg
1 tablespoon of dry sherry
1 tablespoon of cornstarch
1/2 teaspoon of salt
1/8 teaspoon of pepper
1/4 cup of minced water chestnuts
1 1/2 teaspoon of minced ginger root
6 slices of day old bread, crust removed
 
2 cups of cooking oil

Instructions
Place shrimp, egg, sherry, cornstarch, salt and pepper in a food processor and whirl until a smooth paste is formed
Remove to a bowl and stir in water chestnuts and ginger. Spread 2 tablespoons of shrimp mixture on each slice of bread
Freeze 15 minutes or until bread can be easily cut. Cut diagonally in quarters.
In a medium skillet, heat oil and add a few pieces of frozen shrimp bread mixture, shrimp side down. Turn and fry on the other side, drain on paper towels.
Serving Suggestions
Serve hot or at room temperature.
