2 tblsp vegetable oil
* 1 large onion, 1/4-in slices
2 tablespoons red wine vinegar
1 tablespoon sugar
* Vidalia onions work the best.

Heat oil in a skillet over medium-high heat. Add onions. Cook until tender, about 3-5 minutes. Add vinegar and sugar. Sauting for about 3 minutes, or until golden in color. Put in a bowl and set aside.
