Remove as many pits as possible from the cores of the apples. Place into a heavy based saucepan on low heat with spices and about 1/2 - 3/4 of a cup of water.

Boil on low heat for 30 mins or until a very soft texture. Take off heat, remove cloves and star anise the put through sieve or blend (this depends on how much texture you want).

Place mixture back onto the stove. Put in sugar and a little more water if very dry. Turn up to moderate heat and boil until 220F on a sugar thermometer or until a thick gooey texture.

|
Cool to room temperature then serve with freshly made scones. (Spoon Jam into a sterilised jar).
