Brown pork cubes then onions. Add seasonings and water - simmer several hours. (Add the pork bones and substitute good homemade broth for the water tp the pot while it is simmering)
Serve in bowls over shredded iceberg lettuce. Top with grated cheese and chopped sweet onion (I use cheddar. If you have a source for frozen or dried hominy, it's even better.
Can be tripled or doubled - just test for salt and spiciness of seasonings.
