1 onion, chopped

1-10 oz. pckg. frozen spinach. thawed, chopped, and drained

5 eggs, beaten

1/4 tsp. black pepper

Instructions |

Preheat oven to 350f. Spray muffin tin with non-stick cooking spray.
|

Heat oil in large skillet. Add onions and cook until soft. Stir in spinach. Cook until excess moisture evaporates.
|
|
|
|
In large bowl mix eggs, cheese, salt, and pepper. Add onion mixture. Scoop into muffin tin. About 3/4 full in each.

|
|
Cook 30 minutes.
|
