     Vegetable barley soup

Ingredients
4 carrots chopped
4 celery stalks chopped
1 lg. onion diced
2 red potataos diced
8 cups beef stock
1 small cabbage shredded
2 zucchini chopped
1 14 oz can green beans drained
1 8 oz can of whole kernel corn drained
 
1 14 oz can of tomatoes
1 cup barley
olive oil
salt and pepper
fresh basil
fresh parsley

Instructions
in a lg.soup pot combine carrots celery onion and potatos and saute in olive oil until softened. add stock and bring to a boil.
add next 6 ingredients to the pot and boil for 1 min. reduce heat cover and simmer for 45-50 min. stirring occasionaly.
add salt and pepper, fresh basil and fresh parsley. cook for 5 min. and serve.
you can substitute dry basil and parsley.
