     Peanut Butter and Chocolate Chunk Muffins

Ingredients
2 1/4 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
2/3 cup brown sugar
6 Tbsp butter, melted and cooled
1/2 cup peanut butter (Natural, smooth PB)
2 large eggs
1 cup milk
3/4 cup dark chocolate chunks
 

Instructions
Preheat oven to 375 degrees and line 12 standard muffin tins.
Whisk together flour, baking powder, salt and brown sugar in a large bowl. In another bowl, mix the butter, peanut butter, eggs and milk until smooth. Pour the peanut butter mixture into the flour mixture and stir until just combined. Stir in the chocolate chunks.
Fill each muffin tin to the top to ensure a rounded dome top. Bake 20 minutes or until a tester comes out clean and the tops spring back when lightly tapped. Cool on a whire rack.
