     Red Potatoes with Herb Vinaigrette

Ingredients
1 1/2 pounds red potatoes, quartered
2 tablespoons white wine vinegar, I used the apple cider type
1 tablespoon EVOO!!
1/4 teaspoon salt and pepper
1/4 cup sliced green onions
2 teaspoons chopped, fresh parsley
 

Instructions
Place potatoes in medium saucepan. Cover with cold water; bring to a boil. Cook for 8 minutes or until tender; drain. Cool
Combine vinegar, olive oil salt and pepper in a large bowl, stirring well.
Add potatoes, green onion and parsley to vinegar mixture; toss until potatoes are thoroughly coated with vinaigrette.
