     Passover Vegetable Latkes

Ingredients
3 potatoes, peeled, cooked and mashed
1 cup grated carrots
1 cup chopped fresh parlsey
1 onion peeled and grated
1 cup of matzo meal
1/2 cup grated parmesan or cheddar cheese
salt and pepper
2 beaten eggs
frying oil
 

Instructions
Mix all ingredients together and form patties with wet hands. Heat oil in frying pan and fry the patties on both sides until brown. Remove from pan and put on a try with paper towels to absorb the fat. Serve hot or cold, yummy with sour cream.
