5 green onions (white and light green only), chopped
1/2 tsp salt
1/2 tsp pepper
Instructions
Place beans and 1/4 cup water in saucepan and boil till tender-crisp. Plunge into ice water to shock, drain well and set aside.
Cook bacon over medium heat till crisp. Drain on paper towels and reserve 2 Tbsp drippings in a small bowl, discarding the rest. Wipe skillet clean.
Saute green onions in skillet in reserved drippings over medium-high heat for 1 minute. Stir in green beans and salt and pepper. Saute 2-3 minutes or till thoroughly heated. Stir in bacon and serve.
(Optional - stir in 1-2 tsp sugar during final sauteing process, with a clove of garlic, and finally a splash of garlic, for a sweet-sour effect)
