     Cheese Straws

Ingredients
1 1/3 cups flour
1 tsp salt
1 tsp dry mustard
1/4 tsp cayenne
1/2 cup butter, cut in pieces
1 cup extra-sharp cheddar, grated
2 Tbsp water
 

Instructions
Preheat oven to 425. Sift together flour, salt, dry mustard and cayenne. Put butter and grated cheese in mixing bowl, mix several minutes till thoroughly blended.
Gradually, add dry ingredients, mix till fully incorporated. Add water and mix 1 minute longer.
Turn dough on lightly floured surface, knead 5 or 6 times. Roll our to 1/4 inch thickness, cut in strips 1/4 inch wide, and 4-5 inches long. Place on ungreased cookie sheet, 1/2 inch apart, bake 12-16 minutes, till golden brown and crisp.
